Michelle's Onion Soup







The onion is one of my favourite vegetables.

Onions have for hundreds of years been used not only to flavour food, but also, to help with certain health issues. For example, this powerful little root vegetable has been found to be beneficial in: asthma, high blood pressure, sinus conditions, and influenza – the list goes on. In fact, when Im feeling under the weather (or not), I feel a nice bowl of onion soup can instantly lift my spirits and my cold!

Below is the recipe of Michelle’s Onion Soup – made today J

Serves 3 medium bowls. Hope you all enjoy, happy eating!

You will need:

12 small yellow onions

1 stock cube (I used pork, but any cube will do)

1 pint of boiling water

3 teaspoons of olive oil

Stale bread

Cheese of your choice (I used cheddar)

In case of 'onion eye emergency' (you know when these little wonders make you cry) Use googles!! That’s what I do.

1) In a medium sized pan add the olive oil.

2) Slice all the onions very fine add them to the pan – place on a high heat and cook for 15 minutes.

3) Stir occasionally, keep an eye on them, you don’t want to burn them.

4) Meanwhile, boil a pint of water and dissolve the stock cube

5) Add the water and cube to the pan, turn down the heat to low

6) Leave to simmer for roughly 30 – 40 minutes, then leave the soup for about 1 hour (this helps to intensify the flavours)

7) Slice your stale bread and add some cheese on top of it, stick it under the grill

8) Reheat the soup till it’s hot enough

9) Put the soup in a bowl, add the bread and enjoy

First Post - Favorite Food













For about a day or so I had been pondering about what to write in my first post on this blog (I know I have too much time on my hands). Considering I think about food almost constantly, I thought why not write about my favorite food, so here goes.

Sushi

The word sushi means 'its sour'.

Originating from Japan, sushi is a combination of vinegared rice with raw fish/vegetables and made into rolls. Makizushi (my fav kind of sushi) is served inside or around sheets of seaweed. Followed closely is my second favorite - Nigirizushi. Sushi rice is moulded using your hands and a slice of fish/vegetable/tofu/sweet egg is placed on top of the rice (with some lovely wasabi underneath it).

I must discuss wasabi a bit more. Wasabi is known as the Japanese horseradish. With just enough wasabi the lovely green paste can delight and stimulate my taste buds, but add too much and you will surely feel it. It is my belief that wasabi could definitely help relieve a cold!!

Although sushi is very expensive where I live, when I have the money I buy it. Not only is it very healthy, it is extremely delicious and visually very attractive.

Curry

The word curry means 'sauce'.

Coming from Britain, how could I not like curry?! Its no surprise there are so many curry houses in Britain; at one point, it was voted the nation's (UK) number 1 dish.

There is nothing I love more than going to my local Indian restaurant and ordering a nice chicken tikka masala (surprise, surprise it originates from Britain) Succulent pieces of chicken are roasted and served in a red/orange colored sauce. As an accompaniment, I like to have some nice plain/garlic/peeshwari naan bread.

Lassi, is a must to have with a curry. No, im not talking about that lovable dog, im referring to the lovable drink! And lovable it truly is. A yoghurt based drink originally made to help cool down men working in the unbearable heat, lassi is great to help ease the mind - blowing heat from some curries.

These are my two favorite types of food, it may not seem a lot. But, I honestly adore most foods, so if I wrote them all, I would be writing page after page!
